Sushi Kits

I went to a sushi restaurant the other day and ate a dragon roll that had the best batter on its shrimp. They also had a lot of batter used as the presentation. It was light, crispy, and had a touch of sweetness to it. I’ve tried using many batter out there but none is living up the ones in the restaurant nor to its cover on the box. If anyone can please help me find this batter or have a method in manipulating ordinary batters to become more cripsy, please let me know. Thanks a bunch.
